Chitse Bing Cha


Pu-Er tea pressed into the shape of a cake. A traditional present at engagements as the symbol of the family (due to its circular shape) and long life (Pu Er itself) in the southern Chinese province of Yunnan.

Break off a large chunk about a heaping teaspoon in size, using a pu-er knife and put it in a gaiwan. Pour boiling water over it and discard first rinse. Pour a second amount of water and let steep for 3 to 5 minutes. Strain into cup.
